San José de Bocay is a small village in the north of Nicaragua, where cocoa is playing a key role in the process of reforestation. Our farming partner there grows trinitario accriollado beans, which is a fine cocoa with a high content of Criollo. The old-style fermentation and drying facilities are a treat for the eyes!
