Wrapped in pairs in tulle muslin, these chestnuts are immersed in natural water for cooking. They are then candied over a period of 7 to 10 days using a traditional French method, in a syrup made from sugar and Bourbon vanilla from Madagascar. The candied chestnuts are then carefully unwrapped from their muslin and drained.
The chestnuts are placed on a rack to be glazed with a thin layer of translucent, satiny sugar syrup. A few moments in the oven are enough to set the glaze around the chestnuts so that they are shiny and the syrup pearl is kept at the heart of the fruit until the moment of tasting.

• Tasting and storage: Store in the original packaging at 16-18°C, away from sunlight and humidity. Consume within 30 days of receipt.
