These cocoa beans come from the Toledo region in the south of Belize, where the Maya Mountain Cacao team is channelling all of its energies into supporting small family-run plantations that produce single-origin cocoa beans. In this bar we particularly like the slightly tart notes of pineapple and yellow lemon and the intense cocoa-flavoured finish.
