After more than a year of waiting, the November 2023 harvest of cocoa beans from our Luis de Sisa plantation has finally arrived at our workshops. We immediately set to work transforming them into Grand Cru chocolate.
The result of this labour, which took several days, exceeded all our expectations. The chocolate bar has a remarkable, refined and unique aromatic profile.
The first notes are floral, with jasmine, immediately revealing the exceptional character of this harvest. Few chocolates display floral notes with such depth.
Fruity aromas then take over. Flavours of plum, cherry and raisin bring richness and complexity to the tasting experience.
Gradually, a subtle acidity and slight bitterness blend together in a delicate balance.
The tasting experience ends with spicy notes of pepper and nutmeg, prolonging the experience with sweetness.
