In the north of Honduras grows a unique variety of cocoa called Mayan Red in reference to the intense red colour of its pod and its Mayan heritage. This bean was rediscovered in 2006 in the heart of the jungle, close to the Mayan ruins in Copan, whereas it was thought to be virtually extinct. Today, we are proud to be working with this very ancient cocoa, itself a cousin of the original Criollo. It produces intense aromas of hazelnut, grape, caramel and coffee.
